I knew writing about what I was "thankful" over in such a crazy hard year was going to be weird and difficult.
I had a fabulous weekend despite the rain and did take advantage of Friday. I did go into work for appearance sakes, but "sneaked out" at 11:30. Had great adventures.
Anyone else do any trespassing? I did. 'Twas fun.

Yes, I am feeling better. Thank you, everyone for the *hugs* and such.
My weekend was restful, after all. This week will be spent (can we all guess) packing!
14 days and counting until we close on our new house. Then the real fun of moving begins. I will try to talk about something OTHER than that for the next couple of weeks, I promise.

Date: 2008-12-01 12:59 pm (UTC)Still, the turkey that I put in a brine overnight was a hit, despite worries from family who had never had it done that way. The mashed sweet potatoes/yams were a huge hit, and the rest at least got a passable mark. I'm content with that outcome.
I don't know if we'll be hosting Thanksgiving again next year, but if so I'll be ready. I'll have a recipe for mashed potatoes!

1 gallon vegetable broth
1 cup sea salt
1.5 tbs crushed dried rosemary
1.5 tbs dried sage
1 tbs dried thyme
1 tbs dried savory
1 tbs whole peppercorns
1 gallon ice water
Yields enough for a 12 lb turkey. One-an-half or completely double the recipe for a larger bird.
In a large stock pot, combine the vegetable broth, sea salt, rosemary, sage, thyme, peppercorns and savory. Bring to a boil, stirring frequently to be sure salt is dissolved. Remove from heat, and let cool to room temperature.
When the broth mixture is cool, pour it into a clean 5 gallon bucket. Stir in the ice water.
Wash and dry your turkey. Make sure you have removed the innards. Place the turkey, breast down, into the brine. Make sure that the cavity gets filled. Place the bucket in the refrigerator overnight.
Remove the turkey carefully draining off the excess brine and pat dry. Discard excess brine.
Cook the turkey as desired reserving the drippings for gravy. Keep in mind that brined turkeys cook 20 to 30 minutes faster so watch the temperature gauge.

2 teaspoons dried basil
1 teaspoon ground sage
1 teaspoon salt
1/2 teaspoon black pepper
2 cups water
Preheat oven to 325 degrees F
In a small bowl, combine olive oil, garlic powder, dried basil, ground sage, salt, and black pepper. Using a basting brush, apply the mixture to the outside of the uncooked turkey. Pour water into the bottom of the roasting pan, and cover.
Bake for 3 to 3 1/2 hours, or until the internal temperature of the thickest part of the thigh measures 170 degrees F. Remove bird from oven, and allow to stand for at LEAST 30 minutes before carving.

I used about 6-7 large potatoes (to feed 4-6 people, with leftovers); peel and cut into smaller pieces; put into a pot of COLD water, just enough water to cover the potatoes. Cover the pot (water boils faster that way) and bring to a boil. Uncover, reduce heat to medium, and cook until fork-tender (ie: if you can easily stick a fork into one of the larger pieces, it's done).
Drain the potatoes, then return to the pot. Add 1 to 1-1/2 sticks of butter (cut into slices), stir in. Add about 1/2 cup of milk or half-n-half. Get out the electric handmixer and beat until smooth (yes, right in the pot), adding more milk if needed to achieve a good consistency. Add salt and pepper to taste. Serve and enjoy!

Boil til mushy. Meanwhile, also boil yourself some eggs. That's the secret ingredient.
When taters are mushy, pour in some milk and glop in some butter. I like creamy potatoes, so I use liberal milk & butter (especially for holidays :P). Salt & pepper lightly.
Shell hard boiled eggs, and dice up just the egg WHITES. Throw those in the taters. I thought it would be gross when my hubby tried that, but it is sooooooooo good. I prefer them diced up pretty small, to keep it creamier rather than chunkier.

Now...maybe you could tell me how to cook sweet potatoes? Cause I have some and don't know what to do with them. LOL I don't like sweet taters. I was thinking maybe fries, but mashed may be yummy too.

I either serve them right in the skin [slice down the middle, butter and cinnamon, mash] or I remove the skins, scrape into a bowl, and serve mashed that way.

1 pkg cream cheese softened
1 cup sour cream
garlic powder

1 boullion cube or chicken base to taste
Boil potatoes til tender. Remove 1/2 cup of the potato liquid and set aside. Drain potatoes.
Disolve boullion into liquid.
Mash potatoes to desired texture. Add all other ingredients and mix well.
Put in crock pot on low for 2-3 hours. Yum!

... Um... :d I actually thought it was going to be worse; when I first fired up the laptop it wasn't doing shit. Wouldn't turn on, wouldn't do *anything*. Needless to say I was not pleased; my nano is on there and I hadn't yet had a chance to back it all up to lj and the hard drive. I did get it to fire later on that day and managed to save the stuff I wanted to. I'm going in today to have the Geek Squad take a look at it among other things. I have a few other questions for them as well, and I'm hoping that it'll be productive. :d
Needless to say I was whigging out just a bit yesterday (not now; on a dexktop which I can't totally use at the moment because it doesn't have a full running version of office 03 and I don't want 07) and I think it showed in a phone convo I was having with someone.
Oh and due to these issues I did *not* get to turn in my word count for nano, so according to the site I am not a winner this year. In other ways, though I feel like I am. I managed to get a substantial amount of words written around a crazy batshit insane November, I reached 30K which was my actual goal for the month, so I'm proud of me.

I dreamed this morning that we already had a topic, something about New Beginnings, and I was writing an entry because I was almost too late, but I was writing it for this journal as me instead of in Pels' journal for them. I woke up wondering if I'd missed something.
I am spending this morning being a flake and writing up a Christmas list of CDs I want. The sad part is, I'm not including everything and it is still very VERY long, even after the complete blitz I've been on buying music lately.
