Green Room - Week 10 - Day 1

Good morning and welcome back to the game!

Yes, I'll go ahead and confirm the obvious that the new topic will be out later today!

I haven't had a "break" in the game before, so I'm hoping that people convince me that it's a good idea by all coming back!*G*

So how was everyone's extended weekend? How are you planning on getting by this week?*G*

How do you mess up mashed potatoes? I'll chime in with my recipe:

Wash & chop taters. I don't even bother peeling. Too much work, I suck at peeling, it wastes taters AND nutrients. Chop those suckers in there.

Boil til mushy. Meanwhile, also boil yourself some eggs. That's the secret ingredient.

When taters are mushy, pour in some milk and glop in some butter. I like creamy potatoes, so I use liberal milk & butter (especially for holidays :P). Salt & pepper lightly.

Shell hard boiled eggs, and dice up just the egg WHITES. Throw those in the taters. I thought it would be gross when my hubby tried that, but it is sooooooooo good. I prefer them diced up pretty small, to keep it creamier rather than chunkier.

Now...maybe you could tell me how to cook sweet potatoes? Cause I have some and don't know what to do with them. LOL I don't like sweet taters. I was thinking maybe fries, but mashed may be yummy too.

I always make sweet potatoes the same way.

1. bake in a 400F oven for about an hour (give or take). the slice is to keep it from exploding from the build-up of steam inside the skin.
2. they are done when the skin peels away

I either serve them right in the skin [slice down the middle, butter and cinnamon, mash] or I remove the skins, scrape into a bowl, and serve mashed that way.

Very cool! Thanks for sharing. I was trying to show kids different root vegetables we could try, then I brought them home and realized I had no clue how to make them yummy.

Mashed potatoes

The mashed potato recipe I used this Thanksgiving was wonderful but it is definitely rich.

8 red potatoes washed, and cut into quarters (leave the skins on if desired)
1 pkg cream cheese softened
1 cup sour cream
garlic powder
salt
1 boullion cube or chicken base to taste

Boil potatoes til tender. Remove 1/2 cup of the potato liquid and set aside. Drain potatoes.
Disolve boullion into liquid.
Mash potatoes to desired texture. Add all other ingredients and mix well.

Put in crock pot on low for 2-3 hours. Yum!

Hmmm, I'm going to have to try that. I've had mashed potatoes with sour cream, which was way yummier than I expected to be. I imagine the other stuff would only make it so much better.

I was going to give you the recipe even though I'm fairly late coming with the answer, but I see that [livejournal.com profile] spydielives has done a fine job with a recipe. They're really quite simple. :)
